CRIOLLA DISHES - BROUGHT TO LIFE
At ¡Bomba!, criolla means food rooted in the island—shaped by Puerto Rico’s Indigenous Taíno, African, and Spanish influences, and carried forward through generations. It’s not just about recipes, but ritual, rhythm, and connection. Our kitchen honors this tradition through slow-roasted pernil, soulful platos criollos, and golden street-food classics pulled straight from the cuchifrito.
The experience comes alive at the table with our signature tableside mofongo, mashed fresh to order and filled with everything from crispy chicharrón and roast pork to coconut-garlic seafood or umami-rich vegan comforts. You’ll taste island staples like pastelón, bacalao con bollitos, arroz con gandules, and vibrant mojo-drenched sides—each dish rooted in heritage, made with intention, and meant to be shared.
This is criolla cooking as it’s meant to be: bold, communal, and alive with sabor y ritmo.

Every wall at ¡Bomba! speaks. Our space is layered with hand-illustrated murals, Taíno-inspired symbols, and vibrant scenes drawn from Puerto Rico’s past and present—deeply influenced by the bold, expressive street art of Santurce, the island’s creative heartbeat.
Each piece is chosen to honor memory, movement, and place. From the rhythms of bomba dancers and street musicians to the watchful coquí and coastal landscapes, the art throughout the restaurant isn’t ornamental—it’s narrative.
These visuals echo Puerto Rico’s African, Indigenous, and Spanish roots, creating an environment that feels immersive, soulful, and alive. As you move through each dining space, the décor shifts with the story—inviting you not just to dine, but to step inside the culture that inspires every plate, every beat, and every gathering at the table.

DIFFERENT THEMED DINING AREAS
At ¡Bomba!, the dining experience moves through distinct spaces, each designed to evoke a different place, time, and feeling from Puerto Rico—through color, texture, light, and sound.
The Old San Juan dining room is warm, intimate, and grounded in history. Hand-illustrated murals reference stone forts, ocean horizons, and aging colonial streets. Earthy tones and gentle lighting invite slower meals, conversation, and connection—like an evening tucked inside a centuries-old city.
The Santurce bar shifts the energy. Inspired by the arts and music district, this space is bold, vibrant, and alive with color. Patterned tile, graphic murals, neon accents, and layered textures create a rhythmic backdrop for cocktails and conversation. Music leads here—louder, brighter, and celebratory—making the bar feel social, expressive, and constantly in motion.
Outdoors, the Playa patio offers contrast and release. Open air, coastal hues, and natural textures set the tone, with umbrella-shaded tables, lantern light, and ocean-inspired murals that glow at sunset.

As last call approaches, the music fades away entirely. In its place, you hear the gentle sound of the coquí — Puerto Rico’s nighttime heartbeat. No abrupt endings. No harsh signals. Just a beautiful landing.

Tragos (Bar Drinks) at ¡Bomba! are built for sabor y ritmo—crafted with quality rum and thoughtfully chosen spirits, then lifted with real, house-made ingredients.
We juice our own pineapples, whip up our coconut cream in-house, and shake up an extensive lineup of tropical cocktails featuring island favorites like guayaba y parcha.
You’ll also find refreshing Puerto Rican style beers from local breweries, plus Spanish-style wines made right here in the Pacific Northwest—because the best drinks, like the best nights, should feel both transported and right at home.
